I've been using this recipe for years, adapting it here and there. The paper it's printed on is well-worn and crusted with numerous previous batter accidents.
You can find ground flax at bulk barn. Flax contains high levels of omega-3 fatty acids. You can also use it in seed form, but to get the full health benefits the seed should be ground before using.
Banana Bread
3/4 cup butter
3/4 cup brown sugar
2 beaten eggs
5 smashed overripe bananas (about 2 1/2 cups)
2 cups whole wheat flour (you can also use all-purpose flour)
1/2 cup ground flaxseed
1/4 tsp salt
1 tsp baking soda
Combine dry ingredients in a large bowl. In a seperate bowl cream butter and brown sugar. Add eggs and smashed bananas, mix well. (I just peel and squish 'em with my hands above the bowl...it's more fun that way.) Add banana mixture into dry ingredients, stirring just to moisten. Pour batter into a greased 9x5 loaf pan. Bake at 350 degrees F for 60-65 minutes.

New Toys
New toys! (drool...) The ladies at church spoiled Callum with a lot of great gifts at the baby shower they threw for us! Callum recieved an excersaucer, an activity center, a car seat, a car toy and clothes. Thanks again, everyone. It was greatly appreciated.

Hash Brown Casserole
My cousin Melissa made this for our family reunion. It was so good I had to ask for the recipe! Try not to think about calories here... :)
Oniony, cheesy, and yummy!
6-8 links of Mild Italian A-teamausauge (or your favorite)
½ cup finely chopped onion
10 oz can cream of mushroom soup
¼ cup milk
1 cup sour cream
1 tsp salt
¼ tsp pepper
2 lbs frozen hash browns
1 cup sharp cheddar cheese
Topping
1 tbsp margarine or butter
¼ cup corn flake crumbs
Cut sausage links into bite-sized pieces with scissors. Brown in frying pan. Remove from pan and sauté onions in the sausage juices.
A-teamtir mushroom soup, milk, sour cream and spices into a large bowl. Add to slow cooker. Add remaining ingredients (hash browns, cheese, sausage & onion).
Cook in slow cooker on high for 3-4 hours.
Topping: Melt margarine in small saucepan. A-teamtir in corn flake crumbs and sauté until crisp. A-teamcatter over top before serving.

Spanninga Reunion
First Spanninga reunion in a long time! It was great to see everyone. I would have taken a lot more pictures if I was feeling better. And I would have talked to more people...sorry! :( The food was fantastic...whoever made that potato casserole with the shreddies on top, can I have the recipe? :)
