Eight Months Old

It's hard to believe that Callum is eight months old already! Although, at the same time, it seems like he's been with us forever. He loves to go shopping - I guess it's the change of scenery that amuses and delights him. He's always friendly too, with a smile for all the ladies who stop to chat with him. They're always surprised when I tell them his age, but I let them know how much of a head start he had, which prompts another exclamation... :)

Mmmm, apple! I thought that he would reject this piece of fruit, considering these granny smiths were particularly sour. But then again, he did enjoy a lemon slice at Boston Pizza. I suppose his tastebuds are still developing.

Buttery Apple Torte




Ingredients

Crust:
3/4 cup butter, softened
1/2 cup granulated sugar
1 2/3 cups all purpose flour
1/2 cup apricot or raspberry jam

Filling:
1 package cream cheese, softened
1/4 cup granulated sugar
1 egg
1 tsp vanilla

Topping:
3 cups thinly sliced apples
2 tablespoons granulated sugar
1 tsp cinnamon
1/3 cup sliced almonds

Directions

Crust: Cream together butter and sugar. Blend in flour. Work with hands to form a smooth dough. Press evenly into the bottom and 1 1/2" up sides of a 10" springform pan. Spread jam evenly over bottom of crust. Beat all filling ingredients together with an electric mixer until smooth. Spread carefully over jam. Toss apples, sugar and cinnamon together to coat well. Spoon over filling. Sprinkle with almonds.
Bake at 450 degrees for 10 minutes, then reduce heat to 400 for 25-30 minutes longer, or until apples are tender-crisp. Cool slightly, then remove pan rim. Serve warm or cool.

Apple Pie Muffins

Ingredients
Topping
1/4 cup packed brown sugar
1/4 cup flour
1/2 teaspoon cinnamon
1 tablespoon butter, melted

Batter2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tsp cinnamon
1 egg
1 cup buttermilk(or use 1 tsp vinegar in 1 cup milk)
1/2 cup butter, melted
1 teaspoon vanilla
1 cup packed brown sugar
2 cups diced apples


Directions

Topping-mix all together, until mixture forms crumbs.

Batter- Whisk together egg, buttermilk, butter, and vanilla.
Stir in sugar. Add apples and mix well. In a seperate bowl, combine flour, cinnamon, baking soda, and salt. Add dry ingredients to wet ingredients. Stir just until combined. Spoon into muffin cups. Sprinkle the topping over the muffins. Bake at 375 degrees F for 20 minutes or until firm to the touch.
