Whipped Shortbread Cookies
Ingredients
1 pound butter
1 cup powdered sugar
1 teaspoon vanilla
pinch salt
1/2 cup cornstarch
3 cups all-purpose flour
Method
Preheat oven to 350 F. Cream together butter, icing sugar, vanilla and salt. Gradually add cornstarch and flour. Whip with an electric mixer until fluffy. Place into a cookie press and press out cookies on cool baking sheet. (OR use a small ice cream scoop or your hands to roll into balls and place on cookie sheets, press flat.) Decorate with candied cherries or dragees if desired. Bake 12-15 minutes. (Light golden brown on edges)Let cool for 2 minutes on baking sheet, then remove to wire rack to cool completely. Store in an airtight container at room temperature.

Weekend
On Friday we headed out to my hometown to visit Mom and Dad. Uncle Bart and Aunt Janna were visiting as well with their puppy Bandit. Callum was instantly in love and giggled everytime he touched him! Patches never lets him come near so it was quite a treat for him. We weren't sure how the dog would react, but after a bit of uncertainty they became good friends!

Change of Adress
Hi all,
So today I clipped on my free Crystal Light pedometer to see how many steps I take in one day. The recommended goal is 10,000. Take the Challenge!
On another note, I'm going to be changing my blog adress a week from today. I will email all of you the new adress soon.

Busy Weekend
We went to my inlaw's place to hang out with Piet as Mom and Dad were taking a holiday weekend in Stratford. They used to call St. Marys home for a number of years, so I'm sure they had a great time seeing old sights! They brought us home some yummy chocolates from The Chocolate Factory. Thanks Mom and Dad!
We actually had more company at their place the two days we were there than we've had at our place in a month! :) It was nice to see everyone again!
They have a gorgeous backyard with a little pond and a lovely garden. An ideal place for a photo shoot, especially during the late afternoon sunshine. Of course it wasn't a long session as the heat was borderline unbearable. What a pleasure it was to have central air on a weekend like this! As soon as we got home Sunday night Stu installed our little window unit in, it was so stuffy.
They have more wildlife in their backyard than we do!

Shortbread Meltaways
Ingredients
1 cup unsalted butter, softened
1/2 cup icing sugar
2 tsp vanilla
1 3/4 cups all-purpose flour
1/2 cup corn starch
3/4 tsp baking powder
1/4 tsp salt
1 cup Chipits SKOR toffee bits
Procedure
Preheat oven to 350 degrees F (180 C) Line cookie sheets with parchment paper.
Beat butter, icing sugar and vanilla until creamy. In a seperate bowl combine flour, corn starch, baking powder and salt; stir half into butter mixture. Stir in toffee bits and remaining flour mixture.
Roll heaping tablespoonfulls of dough into balls. Place on prepared cookie sheets, spacing about 2" (5 cm) apart.
Bake in the centre of preheated oven for 15 minutes or until lightly golden. Let cool on pan for 5 minutes. Dust with more icing sugar if desired.
